This soup is delicious, VERY flavorful, and easy to make.
1 stick butter
1 large onion, chopped
5 cloves garlic, chopped
2 large carrots, chopped
3 celery stocks, chopped
¼ cup flour
5-6 cups whole milk
2 potatoes, baked and cut into bite-sized pieces (skin on)
½ cup Parsley Pesto
Salt and pepper to taste
Dried or fresh oregano and dill, to taste
8 oz. sour cream
Melt butter; sautee onion, garlic, carrots
and celery until soft. Add ¼ cup flour, then add milk slowly, 1 cup
at a time, stirring well. When soup is warm, add potatoes and parsley petso,
and let cook at a very light simmer for 10 minutes or so. Add salt, pepper,
and herbs to taste. Just before serving, stir in sour cream.
